You can make a chicken farm. You should unstack chickens with name tags to make sure they lay eggs and don't de-spawn. To make this easier ask an MVP+ to /spawnmob chicken and then name tag them as you don't need the hassle of whacking them on with a spawner and the entity limit in a chunk being reached. I used to use water at the bottom as this used to increase the functionality of mobs but it also sometimes drowns the chickens.
Here is an example of one that has worked server wide on Manacube for the last 2 years.
